A simple recipe to make wild Mediterranean big beans using foraged plants. This has quickly become one of my favourites!
Ingredients
- 1 red onion, finely sliced
- 150g of prepared nettles
- 1 tin of butter beans (drained)
- 1 tin of chopped tomatoes
- 1 tbsp of runny honey
- ½ tsp of dried chilli flakes
- 1 tsp of ground cinnamon
- 1 tbsp of wild marjoram, finely chopped
- 1 tbsp of wild garlic, finely chopped
- 10g of cow parsley, leaves and stalks, finely chopped
- Salt and pepper
How to make the wild Mediterranean big beans
- Heat the oil in the pan
- Add the onions, and fry until softened
- Add the chilli flakes, ground cinnamon, wild marjoram, wild garlic and salt & pepper and stir for 2 to 3 minutes
- Add the beans, tomatoes and honey
- Stir to combine
- Bring to a simmer
- Add the nettles and simmer for 20 minutes
- Scatter the cow parsley over the dish
