Wild mediterranean big beans


A simple recipe to make wild mediterranean big beans using foraged plants.  This has quickly become one of my favourites!

Ingredients

  • 150g of prepared nettles
  • 10g of cow parsley, leaves and stalks, finely chopped
  • 1 tbsp of wild marjoram, finely chopped (if you can’t find wild marjoram, use 1 tsp of dried oregano)
  • 1 red onion, finely sliced
  • 1 tin of butter beans (drained)
  • 1 tin of chopped tomatoes
  • 1 tbsp of runny honey
  • ½ tsp of dried chilli flakes
  • 1 tsp of ground cinnamon
  • Salt and pepper

How to make the wild mediterranean big beans

  • Heat the oil in the pan
  • Add the onions, salt and pepper and leave for 2 to 3 minutes to soften
  • Add the nettles for 3 to 4 minutes before adding the beans, tomatoes, honey, spices and wild marjoram
  • Stir to combine
  • Bring to a simmer for 20 minutes
  • Scatter the cow parsley over the dish
