A simple recipe to make wild mediterranean big beans using foraged plants. This has quickly become one of my favourites!
Ingredients
- 150g of prepared nettles
- 10g of cow parsley, leaves and stalks, finely chopped
- 1 tbsp of wild marjoram, finely chopped (if you can’t find wild marjoram, use 1 tsp of dried oregano)
- 1 red onion, finely sliced
- 1 tin of butter beans (drained)
- 1 tin of chopped tomatoes
- 1 tbsp of runny honey
- ½ tsp of dried chilli flakes
- 1 tsp of ground cinnamon
- Salt and pepper
How to make the wild mediterranean big beans
- Heat the oil in the pan
- Add the onions, salt and pepper and leave for 2 to 3 minutes to soften
- Add the nettles for 3 to 4 minutes before adding the beans, tomatoes, honey, spices and wild marjoram
- Stir to combine
- Bring to a simmer for 20 minutes
- Scatter the cow parsley over the dish
