Wild mediterranean big beans


A simple recipe to make wild Mediterranean big beans using foraged plants.  This has quickly become one of my favourites!

Ingredients

  • 1 red onion, finely sliced
  • 150g of prepared nettles
  • 1 tin of butter beans (drained)
  • 1 tin of chopped tomatoes
  • 1 tbsp of runny honey
  • ½ tsp of dried chilli flakes
  • 1 tsp of ground cinnamon
  • 1 tbsp of wild marjoram, finely chopped
  • 1 tbsp of wild garlic, finely chopped
  • 10g of cow parsley, leaves and stalks, finely chopped
  • Salt and pepper

How to make the wild Mediterranean big beans

  • Heat the oil in the pan
  • Add the onions, and fry until softened
  • Add the chilli flakes, ground cinnamon, wild marjoram, wild garlic and salt & pepper and stir for 2 to 3 minutes
  • Add the beans, tomatoes and honey
  • Stir to combine
  • Bring to a simmer
  • Add the nettles and simmer for 20 minutes
  • Scatter the cow parsley over the dish
