A quick and easy recipe to make delicious wild pakoras and ground ivy raita.
Ingredients
- 100g of chickweed, nettles or ramsons
- A clove of garlic
- 1 onion, thinly sliced
- 200g chickpea flower
- 2 tsp of curry powder OR ½ tsp each of cumin, ground coriander, turmeric and ginger
- 1 tsp of salt
- 120mls water
- Vegetable oil
- A handful of ground ivy
- Natural yoghurt
- Splash of lemon juice
How to make the wild pakoras and ground ivy raita
- Mix the dry ingredients together
- Slowly add the water to form a paste
- Mix in the onion, garlic and chickweed
- Take a spoonful of the mix and mould with your hands into a ball
- Heat the oil in a large pan until very hot
- Add the mixture balls a few at a time
- Cook until golden
- Finely chop the ground ivy and mix with the yoghurt and lemon juice
