We used a mixture of shop bought and foraged mushrooms when we made this. If you aren’t completely, absolutely, 100% certain about your fungi identification, don’t use foraged mushrooms!
Ingredients
- 1kg of mixed mushrooms
- A large knob of butter
- A large splash of olive oil
- A red onion, finely sliced
- 2 garlic cloves, finely chopped
- 4 rashers of bacon cut into thin strips
- 150ml of single cream
- Lemon
- Thyme, either a few sprigs or a good handful if dried
- Salt and pepper to taste
How to make the mushrooms with bacon & herbs
- Melt the butter and add the olive oil
- Add the onion, garlic and bacon and stir
- Add the mushrooms
- Season
- Cook gently for 8 to 10 mins until the juices run freely, then start to evaporate and the onions and mushrooms start to caramelise
- Add the thyme and the cream
- Cook for 1 min, then reduce the heat and simmer for a minute
- Add a good squeeze of lemon juice
- Serve with herby flat bread
