Ingredients
- 2 handfuls of hogweed shoots
- 1 small onion, chopped
- 1 pack of smoked bacon lardons
- 100g of feta cheese
- 6 eggs
- Olive oil
- Salt and pepper
How to make the Hogweed, Bacon & Feta Frittata
- Fry the onion until translucent
- Add the bacon lardons and fry until golden
- Add the hogweed shoots
- Beat the eggs and pour into a separate pan
- Sprinkle with the feta cheese and season
- Add the mixture to the frying pan
- Stop stirring, lower the heat and allow the mixture to cook for 4 or 5 minutes, until the base is golden and the top puffed
- Take a large plate, turn it upside down over the frying pan and turn the frittata onto the plate
- Slide back into the frying pan and cook the other side for 3 to 4 minutes
