These cheesy nettle puff pies are delicious and simple to make, so give them a try!
Ingredients
(for 12 pies)
- 250g of puff pastry
- 200g of grated cheese (we used cheddar)
- 125ml of cream or milk
- 3 eggs
- 2 sliced tomatoes
- salt and pepper
- A large bunch of nettle tips, washed, blanched, drained and chopped
- Ramson sauce (optional)
How to make your cheesy nettle puff pies
- Lightly oil a muffin tin
- Roll the pastry so that it is quite thin and cut to fit the holes in the muffin tin
- Line the muffin tin so that the pastry is slightly above the rim of the holes
- Mix the nettles and grated cheese
- Divide the mixture into 12 and half fill the pastry cases
- Mix the milk and eggs and season with salt and pepper
- Pour into each pie so that the nettle and cheese filling is just covered
- Add a little ramson sauce to the top of each pie
- Top with a slice of tomato
- Put in a preheated oven a 200 C for 1/2 an hour
