Sesame Nettle Toast


Who doesn’t like prawn toast when they have a Chinese.  Here we’ve added some nettles to the recipe, and it definitely is better for it.  But don’t take my word for it – give it a try yourself, it’s really easy to make and tastes great.  Plus nettles are good for you, so a win win!

Ingredients

  •  2 handfuls of prepared nettles*
  • Bunch of ramsons
  • 12 raw prawns
  • 1 egg
  • 6 slices of bread
  • 2cm piece of ginger, grated
  • 1 tbsp of soy sauce
  • Sesame seeds
  • Pinch of salt
  • Olive oil

How to make the Sesame Nettle Toast

  •  Finely chop the prawns
  • Add the salt, egg, ginger, soy sauce, ramsons and nettles and mix into a paste
  • Spread the mixture onto the bread
  • Sprinkle with some sesame seeds
  • Cut into 4 triangles
  • Heat a little oil in a frying pan and shallow fry on both sides until golden brown

*To prepare the nettles, plunge them into hot water, immediately refresh them with cold water, drain and ring out any water.
