Nicola and I both look forward to this time of year, when the elder are in flower. One of our favourite elder flower recipes is for elder flower doughnuts. Try to pick the flowers whilst they are creamy white; the creaminess is from the pollen which gives the flowers their flavour.
Ingredients
- 16 elderflower sprays
- 250g plain flour
- 50g caster or icing sugar
- 4 tbsp olive oil
- 4 eggs
- 300mls water
How to make elder flower doughnuts
- Mix the flour, sugar and olive oil together
- Whisk in up to 300mls of water, stopping at the consistency of very thick paint.
- Cover and leave to stand
- Whisk the egg whites until they form soft peaks
- Fold into the batter
- Dip the flowers in the batter, allowing any excess to drip off
- Lower into hot oil
- Cooked until puffed and golden
- Sprinkle with caster or icing sugar
