Sweetcorn fritters with ramsons and cow parsley   Recently updated!


This is a new recipe that we’ve recently added to our foraging days, but it’s already one of my favourites!

Ingredients

  • 2 cm of fresh ginger, grated
  • 2 bunches of wild garlic, finely chopped
  • 2 tbsp of cow parsley, finely chopped
  • 1 tsp of chilli flakes
  • 1 tin of sweetcorn, drained
  • 2 large eggs
  • 6 tbsp of chickpea flour
  • 2 tbsp of cow parsley finely chopped
  • Salt and pepper

How to make sweetcorn fritters with ramsons and cow parsley

  • Mix all of the ingredients together
  • Season with salt and pepper
  • Heat a little oil in a pan
  • Put 1 dessert spoon of the mixture into the hot oil
  • Fry on each side until golden brown
