This is a new recipe that we’ve recently added to our foraging days, but it’s already one of my favourites!
Ingredients
- 2 cm of fresh ginger, grated
- 2 bunches of wild garlic, finely chopped
- 2 tbsp of cow parsley, finely chopped
- 1 tsp of chilli flakes
- 1 tin of sweetcorn, drained
- 2 large eggs
- 6 tbsp of chickpea flour
- 2 tbsp of cow parsley finely chopped
- Salt and pepper
How to make sweetcorn fritters with ramsons and cow parsley
- Mix all of the ingredients together
- Season with salt and pepper
- Heat a little oil in a pan
- Put 1 dessert spoon of the mixture into the hot oil
- Fry on each side until golden brown
