What’s it about?

Located between Canterbury and Ashford, join us at our ancient woodland camp on the beautiful Kent Downs for this 1 day deer preparation and butchery course and learn how to skin and butcher a deer., as well as other game.

We understand that this is an emotive subject for many people but we believe that it’s an important skill for those of us that spend much of our time outdoors.  There is a disconnect in the modern world between people and their food; on this deer preparation course we aim to re-establish that connection and remind ourselves where meat comes from.

Crucially we believe that the whole process must be conducted in a way that is respectful to the animal.  The animals that are used on this course are carefully selected so that the population as a whole benefits; we do not advocate trophy hunting, we don’t use stags nor females that are pregnant or have young.

We will make use of as much of the animal as possible.

What will I do on this deer preparation & butchery course?

During your time spent with us on this 1 day deer preparation course, you will:

  • Learn how a deer is selected for culling, where and when it can be culled, how the animal is stalked and how it’s dispatched,
  • Understand about the safe use of firearms when deer stalking,
  • Find out about the various diseases that the animal must be checked for,
  • Be shown meat hygiene techniques and methods,
  • Skin the deer with minimal damage to the hide or the meat,
  • Butcher the deer to ensure that as much meat as possible is produced,
  • Learn about the different cuts of meat produced and how to cook them.

Once the animal has been butchered we will light a fire and cook some of it.

Bring a bag so you can take home a venison steak or two!

We’ll also start the process of tanning the hide by fleshing and salting it.  It will then need to go into a tanning solution for a week or so before softening.

The course isn’t just about deer preparation and butchery, if time permitts, and the game is available, we will also look at preparing rabbit and pigeon.

Epic Day!

Our Deer Butchery day was amazing. The course instructor Phil had so much experience, knowledge and expertise I never expected to learn so much about Game and its ethical and respectful management within our countryside. It was fascinating to understand and even covered different species - Phill fully explaining how management of Deer herds is more about conservation and herd health than eating them. It was a full day with no time lost giving detailed hands on experience. Gary and Nicola were "on hand" all day to help and ensure that the day was enjoyable and Nicola is an excellent Chef! I would recommend this to anyone who is interested in conservation and food from our countryside. (Always with a knowledgeable mentor of course)

Great day out

I attended this course on 3.4.22 and had the most fantastic day out. Phil was so knowledgeable and informative. It didn't matter how many questions we put to him he found time to answer and explain. Anyone interested in shooting and collecting your own food will find this day very worth while. Also many thanks to Gary and Nicola for the refreshments and running the day.

Fantastic day and really enjoyed this course. The instructor was very knowledgable, I learnt lots, tasted some fantastic wild food, met some nice people and even went home with some venison. Highly recccommended.

Fantastic experience and beautiful surroundings!!

Absolutely loved this course!! Learnt so much and great to have hands on experience butchering a deer and a pigeon in such beautiful woodland!! Our hosts, Gary and Nicola, were great and the hunter who taught us how to hunt and butcher the animals was very knowledgeable. Can't wait to have my next experience at Jack Raven!!
