Wild Pakoras and Ground Ivy Raita


A quick and easy recipe to make delicious wild pakoras and ground ivy raita.

Ingredients

  • 100g of chickweed, nettles or ramsons
  • A clove of garlic
  • 1 onion, thinly sliced
  • 200g chickpea flower
  • 2 tsp of curry powder OR ½ tsp each of cumin, ground coriander, turmeric and ginger
  • 1 tsp of salt
  • 120mls water
  • Vegetable oil
  • A handful of ground ivy
  • Natural yoghurt
  • Splash of lemon juice

How to make the wild pakoras and ground ivy raita

  • Mix the dry ingredients together
  • Slowly add the water to form a paste
  • Mix in the onion, garlic and chickweed
  • Take a spoonful of the mix and mould with your hands into a ball
  • Heat the oil in a large pan until very hot
  • Add the mixture balls a few at a time
  • Cook until golden
  • Finely chop the ground ivy and mix with the yoghurt and lemon juice
