Vegan frittata with wild greens


This vegan frittata with wild greens is a fantastic variation on the classic Italian frittata.  And to be honest, you don’t need to be vegan to enjoy it either, it tastes wonderful.

Ingredients

  • 1 cup of gram (chickpea) flour
  • 1 tsp of turmeric
  • 2 cloves of garlic finely chopped
  • 1 cooked potato, thinly sliced
  • 1 sliced tomato
  • 2 handfulls of chopped wild greens
  • A cup of water
  • Salt & pepper to taste

How to make the vegan frittata with wild greens

  • Blend the gram flour, turmeric, garlic and salt & pepper together in a bowl
  • And the water slowly and continue blending until the mixture is smooth
  • Fry the tomatoe potatoe and greens in a frying pan until they’re soft
  • Add the mixture to the pan
  • Fry gently until the edges set
  • Turn the frittata over and cook on the other side
