Ground Elder Rostis 2


Ground elder rostis – the saviours of gardener’s sanity?  Well, maybe.  For many gardeners, ground elder is the bane of their lives.  A once common plant in the vegetable garden, ground elder has fallen out of favour and is now regarded as a pest due to its rapid growth and difficulty to remove.  Well instead of trying to get rid of it, eat it!

Ingredients

  • 500g potatoes
  • 60g ground elder
  • 1 large onion
  • 3 tbsp of plain flour
  • 1 egg
  • Salt & pepper

How to make ground elder rostis

  • Chop the onion, sauté and leave to cool
  • Grate the potato into a sieve or tea towel and squeeze out the liquid
  • Chop the ground elder
  • Combine the ground elder, potato and onion
  • Sprinkle on the flour
  • Lightly beat the egg and add to the mixture
  • Season and mix well
  • Divide the mixture into 12 and flatten to form a disc about 1cm thick
  • Fry until golden on both sides
