We made this delicious blackberry ketchup on our last Wildfoods & Woodland Cooking course at the beginning of October. Really tasty and it went really well with pigeon breast.
Ingredients
- Blackberries ½ pint
- Cider Vinegar 1/3 cup
- Water 2 tbsp
- Brown sugar 1/3 cup
- Butter 1 tbsp
- Lemon Zest 1 tbsp
- Chinese five spice ½ tsp
- Salt ¼ tsp
- Cayenne pepper dash
How to make the blackberry ketchup
- Add berries to the pan with vinegar and water
- Bring to boil over medium heat
- Pour liquid through sieve and press with spoon
- Return liquid to pan
- Add sugar lemon zest and seasoning
- Simmer for 10 mins until thick and bubbly
