Blackberry Ketchup


We made this delicious blackberry ketchup on our last Wildfoods & Woodland Cooking course at the beginning of October.  Really tasty and it went really well with pigeon breast.

Ingredients

  • Blackberries ½ pint
  • Cider Vinegar 1/3 cup
  • Water 2 tbsp
  • Brown sugar 1/3 cup
  • Butter 1 tbsp
  • Lemon Zest 1 tbsp
  • Chinese five spice ½ tsp
  • Salt ¼ tsp
  • Cayenne pepper dash

How to make the blackberry ketchup

  • Add berries to the pan with vinegar and water
  • Bring to boil over medium heat
  • Pour liquid through sieve and press with spoon
  • Return liquid to pan
  • Add sugar lemon zest and seasoning
  • Simmer for 10 mins until thick and bubbly
