Nettle and Potato Curry – tastes great and healthy to boot!


Try this simple recipe for a delicious nettle and potato curry.  Not only does it taste great, but nettles are really good for you, the original superfood!

Ingredients

• 400g of nettles (blanched and rung dry)
• 1 large onion
• 2 cloves of garlic
• 1 fresh green chilli
• 4 potatoes cut into bite size pieces
• 1 tsp of cumin
• ½ tsp of garam masala
• 2 tbsp of tomato puree
• Olive oil
• Salt & pepper

How to make the nettle and potato curry

• Heat the oil
• Fry the onion, garlic and chilli until soft
• Add the spices and fry for 3 minutes
• Add the potatoes and fry until they are translucent
• Add the tomato puree and a splash of water
• Stir in the nettles
• Lower the heat and simmer for 10 – 15 minutes
• Add water as required
• Add salt and pepper to taste
