Mushrooms with bacon & herbs


We used a mixture of shop bought and foraged mushrooms when we made this.  If you aren’t completely, absolutely, 100% certain about your fungi identification, don’t use foraged mushrooms!

Ingredients

  •  1kg of mixed mushrooms
  • A large knob of butter
  • A large splash of olive oil
  • A red onion, finely sliced
  • 2 garlic cloves, finely chopped
  • 4 rashers of bacon cut into thin strips
  • 150ml of single cream
  • Lemon
  • Thyme, either a few sprigs or a good handful if dried
  • Salt and pepper to taste

How to make the mushrooms with bacon & herbs

  •  Melt the butter and add the olive oil
  • Add the onion, garlic and bacon and stir
  • Add the mushrooms
  • Season
  • Cook gently for 8 to 10 mins until the juices run freely, then start to evaporate and the onions and mushrooms start to caramelise
  • Add the thyme and the cream
  • Cook for 1 min, then reduce the heat and simmer for a minute
  • Add a good squeeze of lemon juice
  • Serve with herby flat bread
