Hogweed, Bacon & Feta Frittata 1


Ingredients

  • 2 handfuls of hogweed shoots
  • 1 small onion, chopped
  • 1 pack of smoked bacon lardons
  • 100g of feta cheese
  • 6 eggs
  • Olive oil
  • Salt and pepper

How to make the Hogweed, Bacon & Feta Frittata

  • Fry the onion until translucent
  • Add the bacon lardons and fry until golden
  • Add the hogweed shoots
  • Beat the eggs and pour into a separate pan
  • Sprinkle with the feta cheese and season
  • Add the mixture to the frying pan
  • Stop stirring, lower the heat and allow the mixture to cook for 4 or 5 minutes, until the base is golden and the top puffed
  • Take a large plate, turn it upside down over the frying pan and turn the frittata onto the plate
  • Slide back into the frying pan and cook the other side for 3 to 4 minutes
